PESTO, TOMATO & MOZZARELLA SALAD✨
My homemade pesto recipe is so good- I make an extra batch and store it in my fridge for recipes during the week! You can also individually freeze it to use at a later date 😊 naturally, I had to pair it with my two faves; tomato & mozzarella and turned it into a delicious summer salad! find the recipe below enjoy xx
Pesto, Tomato & Mozzarella Salad
Serves 4
Pesto
2 cups basil
1/2 cup olive oil
1/4 cup pine nuts
1/2 cup Parmesan cheese
2 garlic cloves
Salt & pepper
3 cups cherry tomatoes, halved
1 cup mozzarella balls
1/4 cup basil, chopped
Salt & pepper
Directions
- Add all pesto ingredients to food processor and process until smooth.
- In a bowl, add tomatoes, mozzarella, salt, pepper and fresh basil. Mix together. Drizzle pesto all over and toss together.
- Garnish with fresh basil and black pepper. Serve and enjoy!
